Minty Mousse Trifle For St. Patrick’s Day

13 days!  I cannot believe it has been almost 2 weeks since my last post.  It’s been wild and fun around here!

St. Patrick’s Day is just a couple days away!  Lot’s of things come to mind when I think of this holiday’s food, but two specific things are green and mint!

Recently, I’ve developed a thing for mint.  I love mint cookies, mint brownies, mint chocolate, the  mint color… EVERYTHING mint!  I like enhancing the flavor mint in different ways, and what better way than in a trifle!

I have made probably 4 types of trifles and this one is by far my favorite!

Minty Mousse Trifle

Yields about 6 trifles per cake

You Will Need:

  • White or Yellow Boxed Cake Mix (and all ingredients required to make the cake)
  • Green Food Coloring
  • Instant Chocolate Mousse Mix (and the milk it requires)
  • Vanilla Ice Cream
  • Mint or Mint Chocolate Chips

How to Make:

First, I sprayed two 8 inch round cake pans with non-stick spray.  Then, I followed the directions on the box, making the cake batter.  Before pouring the batter into the rounds, add about 6 big drops of green food coloring into the mixer with the batter.  Let it mix in for a couple of seconds, then pour the batter evenly into the pans.

Bake the cakes according to the directions on the box.  The cakes will go in looking green and come out of the oven looking…brown.  That’s ok!  The inside is still the green we’re looking for!

While the cakes cool, make your mousse using the powder mix and milk.  Typically, you will mix the mousse for 5 minutes.  When you have about thirty seconds left of mixing, add about 1/2 cup of the mint chips.  This will give it a nice minty taste.  Chill mousse in the freezer for 15 minutes.

I only had 4 people who were ready to eat my trifles, so I ended up using only one of the cakes, but we’ll get back to that later.

Crumble the cakes in a large bowl.  You want to have chunks that are not to big and not to small.  Basically, if you can pick it up with two fingers, it’s what we’re looking for.  Pull out the chilled mousse, and grab the ice cream (you will have to serve immediately).

Grab  some cups and prepare to get stacking!  The bottom layer is cake.  Cover the bottom of the cups so no big patches of glass are visible.  Then, add a scoop of ice cream.  Next, add a large spoonful of mousse.  Repeat one more time.  Then, sprinkle some green cake on top for a decorative touch!

Other Tips

  • Chill the cups to keep the ice cream from melting a little longer.
  • Use mint ice cream for even more mint flavor.
  • Make miniature trifles in tiny cups for the kids!

Because I didn’t use the second cake, I used the leftover mousse as an icing!  It was amazing!  Serve with a side of ice cream and you have basically deconstructed your trifle!  Yum!

Strawberry Heart Cake + Homemade Icing Recipe

Valentine’s Day is quickly approaching!  It’s one of my favorite days because you get to express how much you love someone.  There are many ways to express love, but by far my favorite is in food!  Especially sweets!!!

Today, I’m going to show you how to transform a sweet strawberry box cake into a fantastic heart delight!

You Will Need:

For Cake:

  • Box of Strawberry Cake Mix
  • Heart Shaped Cake Pan
  • Crisco
  • Flour (for dusting pan)

The Following Depend on the Cake Mix You Use:

  • 1 cup of water
  • 1/2 cup of oil
  • 3(ish) eggs

For Icing:

  • 1 Cup of  Room Temperature Butter
  • 3 tsp of Vanilla Extract
  • 4 Tbsp of Milk
  • 4 Cups of  Powdered Sugar

To make your box cake, you combine your ingredients in a mixer bowl and blend them for 30 seconds – 1 minute, stir, and then mix for about 3 minutes.  Preheat your oven to temperature on box.  Coat you cake pan with a thin layer of Crisco and dust with flour.  Bake the cake for approximately 30-35 minutes.  Cool for 30 minutes.  Cut off all uneven parts of the cake.  Now…for my favorite part….the icing!

To make you icing…beat (with a hand mixer) the butter, sugar, and vanilla until combined.  Then,  pour in milk and mix for 4 minutes.  I used food coloring to make my icing pink.

I used a decorating bag and flower tip to make my design on my cake.  First, I Should Have done a thin crumb coat on the cake.  Load some icing into the bag and twist.  Gently squeeze the bag and release after 2 seconds to make the flowers.

Jelly, Jelly, Jelly! – Yummy Jelly Roll Recipe

PB & J sandwich…….ahhh.  Scrumptious!  What is your favorite part of the classic peanut butter and jelly sandwich?  The peanut butter?  The bread?  Well, mine is the jelly!!!  But of course, I get sick of only eating jelly on a sandwich or a biscuit.  So, I love jelly rolls!  A jelly roll is simply a cake/bread with jelly and powdered sugar………..My mouth is watering!  I’ve tried so many recipes and this is BY FAR my favorite!

Jelly Roll

Ingredients (yields about 8-10 servings):

  • 1 cup of sugar
  • 3 eggs
  • 1/3 cup of water
  • 3/4 cup of flour
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 to 1/2 tsp salt
  • Powdered sugar (estimated 3 handfuls for coating and sprinkling)
  • 3/4 cup of jelly

How To Make Jelly Rolls

  1. Heat oven to 375°F.  Line a jelly roll pan with parchment paper.  Grease parchment paper with shortening.                                                                                                                                 parchment greased
  2. In an electric mixer, beat eggs  on high power until thick.  Beat in sugar gradually.  On low power, combine baking powder, salt, and flour.  (It is good to have the bubbles in it).  Pour into pan.
  3. Bake for about 10 minutes, or until a toothpick inserted in the middle of cake comes out clean.                                                                                                                                                            angle raw jelly rollcooked jelly roll
  4. Sprinkle powdered sugar all over a kitchen towel (Don’t rub in).  Remove cake from parchment paper, and flip onto towel.  Starting from the narrow side, roll the towel and cake in a tight spiral.  Let cool for 25 minutes.                                                                          roll the rolltowel jelly roll
  5. Unroll the roll. 🙂  Remove the towel as well.  Spread the jelly everywhere around the cake!!! (This is fun for me).  Roll the cake back up and sprinkle the top with powdered sugar for decoration.                                                                                                             roll the jelly

Holiday Treats: Pretzel Sticks

It’s Christmas Eve Eve!  I couldn’t be more excited!!!  And of course, I love the sweeeeeet treats…..a lot!  My awesome neighbor invited us over today to make these pretzel sticks and they were amazing!  Easy and tasty – that’s my style!

To Make Pretzel Sticks, You’ll Need:

  • 1 Bag of Pretzel Rods
  • 2 Bags of Chocolate Chips
  • 2 Bags of Vanilla Chocolate Chips
  • Decorations (sprinkles, peppermint flakes, etc.)  I recommend anything red or green
  • Paper Plates

How To:

  1. Melt the chocolate chips in a bowl in the microwave.  Then, melt the vanilla chips the same way.                                                                                                                                                         choc
  2. Lay out the pretzel rods on a paper plate, and lay the melted chocolate in the bowls next to it.
  3. Dip the pretzel rods into the chocolate (either one), soaking about half of the rod in chocolate.  Allow the excess chocolate to drip off before transferring the now chocolaty rod over to the “decorating station” (just another plate).  Let your kid go nuts here!!!  Be creative while dumping sprinkles everywhere!                                                choc pret

Holiday Treats: PBC Crackers

Ho! Ho! Ho!  Yes, that’s right!  Christmas is upon us!  I couldn’t be more thrilled.  The family, celebrating Jesus, the gifts, the tree, the music, the games.  All of these things help to make Christmas in my house.  But one of my favorite things, of course, is the food!

Holiday food is always super scrumptious (My mom and I make a pretty great kitchen team, but of course I learn from the best).  Aside from Christmas dinner, dessert is the main event!  The sweet chocolates and yummy pies!  Ahh!  My mouth is watering. *sigh*

I have compiled my top three favorite holiday treats this year.  Starting with PBC (Peanut Butter + Chocolate) Crackers.  This cracker combo is delicious and sure to be enjoyed by all!

To Make PBC Crackers, You’ll Need:

  • 1 Jar of Peanut Butter
  • 1 Box of Ritz Crackers
  • 2 Bags of Chocolate Chips
  • Kids Ready to Work

How To Make PBC Crackers:

First, lay out all the sleeves of crackers in pairs.  Take a little spoonful of peanut butter on a knife (I know that makes no sense.  Spoon…knife.. You get the amount I’m getting at).  Spread the peanut butter on one side of one cracker.  Then, stick the other cracker on top of the cracker with peanut butter to form a “sandwich”.  Repeat this with all the pairs of crackers.  Then, melt the chocolate chips in the microwave (Stir every 20-30 seconds).  Using a fork (balancing the “sandwich” on the fork), dunk the sandwich in the chocolate.  Flip it around until the “sandwich” is covered in chocolate.  Lay the chocolate covered “sandwich” out to dry on a cookie sheet.

Once dry, eat up!!!  To take a holiday spin on this, place some holiday sprinkles on the “sandwiches” while they are drying.  For kids, the best part is probably the chocolate dipping part.  Don’t be afraid to get messy!  That’s the fun part about Christmas!

Tater Tot Casserole

Honestly, I had never tried this recipe until this month, and let me tell you…it is a BIG hit in my house!!!

Ingredients:

  • 2 lb Package of Ground Beef
  • 32 oz Package of Tater Tots
  • 10 oz Cream of Mushroom Soup Can
  • 2 cups Shredded Cheese
  • 1 cup Sour Cream
  • Salt and Pepper to Season to Preference

***Also: 9×13 Pan, Cooking Spray, Pan to Brown Meat, Measuring cup (for cheese), & Whisk***

How To:

  1. Preheat your oven to 350 degrees Fahrenheit.  Spray your 9×13 pan with cooking spray.
  2. Brown ground beef on the stove, seasoning to desire.  Then drain.
  3. Spread the ground beef evenly in the sprayed dish.  Whisk together sour cream and soup (kind of a funky blend).  Spread your mixture over the ground beef.
  4. Sprinkle 1 cup of cheese on the mixture.  Finally, lay your tater tots over the cheese.  *Personally, I’m not a giant cheese person, but don’t do much less than 3/4 cup.
  5. Bake in the oven for 30 minutes.  After 30 minutes, sprinkle the remaining cheese on top of the casserole (This is where I would go easy on the cheese).
  6. Bake another 5-10 minutes until the tater tots are golden brown and the cheese is melted.

Chocolate Candy Corn Bars

This is a great fall snack that’s fun to make and no-bake!!!  Hopefully you love candy corn as much as we do!

You’ll Need:

  • 1 Bag of Candy Corn
  • 1 Bag of Chocolate Chips
  • Parchment Paper
  • Baking Pan
  • Peanut butter

How To Make:

  1. Pour your candy corn in a bowl and melt them in the microwave.  Every 30 seconds in that the candy corn is in the microwave, give it a stir.  Once the candy corn is melted, stir in a heaping cup of peanut butter.
  2. Spread the mixture in the bottom of a baking pan lined with parchment paper.  Let the mixture cool until it is firm, but not hard.
  3. Cut your orange mixture into 2 inch rectangles.  Meanwhile, melt your chocolate chips in the microwave in the same way you did the candy corn.
  4. Dip the bars into the melted chocolate.  Roll them until they are covered.  Put them in the fridge until they are done dripping and ready to eat!

To have a little fun, we even carved our names and designs in the drying chocolate with a toothpick!  Have a great Monday!

Food Rainbow

Getting picky eaters to eat ANYTHING can be a challenge, and most of the time it isn’t healthy.  One trick I’ve learned is the food rainbow.  This works very well especially if your kids like to be independent.

Food Rainbow:

Challenge kids to make their own meal with all the colors of the rainbow.  Bonus points for healthy items!  Of course, you’ll have to set some boundaries because candy comes in many colors, you know!  The point of this activity is to give kids the freedom to choose things they like or try new things that seem appealing to them.  It makes them feel like they’re in control and I’m not just eating what Mom or Dad wants.

You can put your own spin on this challenge, too!  Try blending colors by making a peanut butter and banana burrito for the colors yellow and brown.  Make it original!
